In addition to all its unconventional creations, Klaus Leuenberger Speisewerk also strives to give everyday dishes a touch more character. With this in mind, a rich organic dressing has been developed using yoghurt, egg and all kinds of herbs from the forest and meadows. The fresh note of the yoghurt is complemented by the tart taste of the herbs. As the proportion of individual wild herbs varies slightly depending on the harvesting season, the dressing tastes slightly different depending on the time of year.
Ingredients: rapeseed oil, apple cider vinegar, yoghurt*, eggs*, onions*, Valais wild herbs* (wild garlic, nettles, good king henry, wild thyme, comfrey, ribwort plantain, yarrow, meadow sage), mustard, spices (* ingredients from Binntal)
